Fruited Turkey Thighs & Yams

2 tablespoons LAND O LAKES® Butter
2 to 3 pounds (3 or 4) turkey thighs, cut in half lengthwise
2 medium (2 cups) yams or sweet potatoes, peeled, cut crosswise into 1/2-inch slices
1 cup mixed chopped dried fruit
1 teaspoon finely chopped fresh garlic
1/2 teaspoon salt
1/4 teapoon pepper
3/4 cup orange juice
1/4 cup chopped fresh parsley
Hot cooked couscous, if desired


Melt butter in 12-inch skillet until sizzling; add turkey thighs, skin-side down. Cook over medium-high heat, turning once, until skin is browned (5 to 7 minutes). Drain off fat.

Place yams in slow cooker; top with turkey thighs and dried fruit. Sprinkle with garlic, salt and pepper. Pour orange juice over all ingredients. Cover; cook on Low heat setting for 8 to 10 hours, or on High heat setting for 3 to 4 hours or until turkey is tender. Sprinkle with parsley.

Serve with couscous, if desired.

Recipe Tip

Turkey thighs are an overlooked ingredient, but are perfect for long-cooking dishes that contain hearty flavors or sauces. They become very tender and their flavor blends well with many other recipe components.
