Italian Vegetable Egg Strata

This quick egg dish uses croutons instead of a pastry crust.

2 cups Italian-style dried croutons
2 cups shredded mozzarella cheese
1 medium (1 cup) zucchini, shredded
1 medium (1 cup) red bell pepper, cut into thin strips
1/3 cup chopped green onions
1 (14.5-ounce) can Italian-style diced tomatoes, drained
1/2 cup all-purpose flour
1 teaspoon salt


Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with no-stick cooking spray.

Place croutons in bottom of prepared baking dish; top with 1 cup cheese, zucchini, red pepper, green onions, tomatoes and remaining cheese.

Whisk together half & half and flour in medium bowl until smooth. Add eggs and salt; continue whisking until well mixed. Pour mixture over vegetables in baking dish. Bake 35-45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

Recipe Tip

Stratas are an Italian dish that is traditionally made with meat and bread. This recipe has taken on a vegetarian version by eliminating the meat. If you wish to have meat in this strata, 1/4 cup chopped pepperoni would be a nice addition.

Wow !!! Those were the comments I received for this strada. I added a package of sweet italial sausage, and some italian sesonings. I found fresh made italian croutons and doubled the amt called for. It was soo good that I made it 2 days in a row. My husband took it the first day to work, and I made if for my office the next. This was my first recipe I have tried from this site. Can't wait to dazzle the office folks again!
