Slow Cooker Mushroom Barley Chicken

Come home to the aroma and flavor of old-fashioned "chicken in-the-pot" goodness!

2 pounds chicken thighs
2 cups sliced mushrooms
1 cup medium pearled barley
2 medium (1 cup) carrots, chopped
1 medium (1/2 cup) onion, chopped
1 rib (1/2 cup) celery, chopped
1 (14 1/2-ounce) can chicken broth
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1 bay leaf


Melt butter in 12-inch skillet until sizzling; add chicken. Cook over medium-high heat, turning occasionally, 10-12 minutes or until browned. Drain off fat.

Place all remaining ingredients into slow cooker; stir. Place chicken thighs onto mushroom barley mixture. Cover; cook on Low heat setting 2 1/2-4 hours or until chicken and barley are tender.

Recipe Tip

- Before global trading became feasible, barley was more widely used than it is today because it grew in colder climates where wheat or rice was not available. More popular grains, including wheat and rice, are now supplied to countries throughout the world and barley is a grain used primarily in the brewing industry. The pearled barley used in cooking has had the husk removed in a grinding process that also shapes it into a small ball shape resembling a pearl. It is has a slightly chewy texture and adds body to soups, stews and casseroles.

- Slow cookers range in size from 1- to 7-quart. Some slow cookers are more powerful than others. Wattages range from 75 to 400. The most popular sizes are 3 1/2- to 6-quart.

Very good, only 2 0f us so I cut the recipe. Put everything in raw and cooked on high for 2 hrs then turned it down to low till done. Will make again.but
I have been cooking for more than 50 years and ths is the first chicken recipe I have seen, in years that is great. I cook a lot of dishes with barley and I am so glad to see one usinf poultry seasoning.
barly is so tasty and good for you, next time will use half broth and half wine.
I think that the recipe should state cook on high setting for 2-3 hours. If on low, 5 - 6 hours. Look at the total time on the summary :)

Thanks for your comment. The barley gets mushy if cooked too long in the slow cooker. We found after several tests that the cook time should be Low for 2 to 3 hours.

The veggies were still pretty crunchy after 3 hours in the slow cooker. Next time we'll try either cooking the veggies on the stovetop along with the chicken or just dumping everything in uncooked and letting it go for several hours. The flavor was good so with a couple changes could be really good.
This was savory and delicious and makes a great fall/winter meal. It has become a staple for our family.
