1 1/4 cups all-purpose flour
1/4 cup sugar
1/4 cup finely chopped pecans
3/4 cup sugar
2 tablespoons all-purpose flour
3 tablespoons fresh Key lime juice*
1/4 teaspoon baking powder
1 1/2 cups powdered sugar
2 to 3 tablespoons fresh key lime juice*
Freshly grated Key lime zest
Heat oven to 350°F.
Combine all crust ingredients except pecans in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in pecans. Press onto bottom of ungreased 8- or 9-inch square baking pan. Bake 15-20 minutes or until edges are lightly browned.
Combine all filling ingredients in bowl. Beat at low speed until well mixed. Pour filling over hot, partially baked crust. Continue baking 18-20 minutes or until filling is set. Cool completely.
Combine all frosting ingredients except lime zest in bowl. Spread over cooled bars. Garnish with grated lime zest. Store refrigerated.
*Substitute bottled Key lime juice.
Run sharp knife around outside of pan to loosen sides.
