Ingredients
Queso
10 (3/4-ounce) slices Land O Lakes® Deli American, cut into quarters
1 (4-ounce) can chopped jalapeño peppers
Burgers
8 ounces ground chorizo sausage
8 ounces lean ground beef
8 (4-inch) flour tortillas
1 cup prepared pico de gallo
1 cup shredded iceberg lettuce
2 cup southwest-flavored tortilla strips*Substitute 1 (4-ounce) can chopped green chiles. **Substitute regular-flavored tortilla strips or corn chips. Tortilla strips are often found in the produce section of the supermarket.
How to make
-
STEP 1
Heat gas grill on medium-high or charcoal grill until coals are ash white.
-
STEP 2
Combine cheese and jalapeño peppers in bowl. Microwave, stirring every 30 seconds, 2-3 minutes or until melted. Keep warm; set aside.
-
STEP 3
Combine chorizo and beef in bowl. Shape mixture into 8 patties. Grill patties, turning once, 10-12 minutes or until internal temperature reaches at least 160°F and meat is no longer pink in center.
-
STEP 4
Grill tortillas 1-2 minutes or until grill marks are visible on one side.
-
STEP 5
Place patties onto ungrilled side of tortillas. Top each with queso, pico de gallo, lettuce and tortilla strips. Fold tortilla over filling.
-
STEP 6
Serve with extra queso for dipping, if desired.
Tip #1
Hold grilled tortillas warm in aluminum foil while you finish grilling burgers. If you cannot find 4-inch tortillas at the supermarket, substitute 8-inch tortillas, cut into quarters, or cut 4-inch rounds out of larger tortillas with 4-inch biscuit cutter. Burgers can also be served on slider buns or dollar-sized rolls.
Tip #2
Extra queso is delicious served with tortilla chips.
