Caramelized Bacon

Brown sugar caramelizes into a sweet glaze that makes this bacon a treat!

Ingredients

1/3 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1/2 pound (8 slices) bacon

Directions

Heat oven to 450°F. Spray top of broiler pan lightly with no stick cooking spray; line bottom of pan with aluminum foil.

Combine brown sugar and cinnamon in small bowl. Coat bacon slices with brown sugar mixture.

Place coated bacon onto prepared pan. Bake for 12 to 15 minutes or until well-browned.

Immediately remove bacon; place onto serving plate.

To Make Ahead: Prepare bacon as directed above. Place cooked bacon onto microwave-safe plate. Refrigerate until serving time. To reheat bacon, microwave on HIGH for 30 to 45 seconds.

I use a large ziploc bag to basically shake and bake the bacon. Be careful with the oven temp and cook times... we don't always buy the same brand of bacon and some brands cook much faster than other brands depending on how thick/thin the slices are. Instead of cinnamon, often we'll use cracked black pepper with the brown sugar.

Because he is living off-campus this year I knew I would be getting more than one last minute phone call asking if some of his teammates and he could come over for dinner. I wanted to be prepared so I decided I needed to stock my freezer with some easy-to-get-on-the-table entrees.
