Harvest Pumpkin Bars

Pumpkin bars so moist and delicious, they don’t even need frosting!

2 1/2 cups all-purpose flour
1 2/3 cups sugar
3/4 cup Land O Lakes® Butter, softened
1/3 cup milk
1 (15-ounce) can pumpkin
1 1/4 teaspoons baking powder
1 1/4 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice*
1/2 teaspoon ground cloves
Powdered sugar


Heat oven to 350°F.

Combine all bar ingredients in bowl. Beat at medium speed, scraping bowl often, until well mixed. 

Pour batter into greased 15x10x1-inch baking pan. Bake 25-35 minutes or until bar springs back when touched lightly in center. Cool completely. 

Place paper doily over cooled pumpkin bars; sprinkle bars with powdered sugar. Carefully remove doily.

*Substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg and 1/8 teaspoon ground cloves.

This recipe is delicious! Better than any pumpkin bread/muffin I have ever had! I didn't use all the butter though, I only put in about half of what the recipe calls for and it still was delicious!

These are great. Don't be fooled by the picture, they're only about an inch high. :-) The texture is soft, fluffy, and melts in your mouth. I lined my baking pan with parchment paper to make sure they didn't stick. Will definitely make these again.

Followed the recipe exactly. Very disappointed. Not much flavor at all. The crust ends up having an eggy taste.
