Pistachio White Chocolate Chip Cookies

Ingredients

1 cup firmly packed brown sugar

1/2 cup sugar

1/2 cup Land O Lakes® Butter, softened

1/2 cup shortening

2 large Land O Lakes® Eggs

1 tablespoon vanilla

3 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups shelled pistachios

1 (12-ounce) package white baking chips

How to make

  1. STEP 1

    Heat oven to 375°F.

  2. STEP 2

    Combine brown sugar, sugar, butter and shortening in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; continue beating until well mixed. Add flour, baking soda and salt; beat at low speed until well mixed. Stir in pistachios and white baking chips.

  3. STEP 3

    Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 9-11 minutes or until lightly browned.

Tip #1

Pistachios have a mild, delicate flavor. Be sure to use the unsalted variety for baking.
