Prepare the potatoes one day ahead of time to ease meal preparation.
Place potatoes in 4-quart saucepan. Cover with water; add 2 teaspoons salt. Bring to a boil over high heat. Reduce heat to medium. Cook potatoes 15-18 minutes or until fork tender. Drain.
Place hot, cooked potatoes in bowl. Add all remaining ingredients; mash with potato masher or beat with hand mixer until smooth. Add salt and pepper to taste. Place potatoes in 3-quart casserole. Cover; refrigerate 4 hours or overnight.
Heat oven to 325°F.
Pour remaining 1/2 cup milk over potatoes. Cover; bake 30 minutes. Stir. Cover; continue baking 30-40 minutes or until heated through. Sprinkle with paprika and chopped parsley, if desired.

I first used this recipe a few years back for Thanksgiving and everyone loved it. I know make it a staple side dish for my special meals. Kids and adults alike love it!
