Serve this pilaf with chicken and fish and a hearty whole grain bread.
3 ounces (1/2 cup) uncooked dried rosamarina (orzo) pasta
1/2 cup chopped green or yellow bell pepper
1/4 cup chopped onion
2 teaspoons finely chopped fresh garlic
1 cup garbanzo beans, rinsed, drained
1 (14 1/2-ounce) can diced tomatoes with basil, garlic and oregano, undrained
1 (6-ounce) jar marinated artichoke hearts, drained, cut up, if necessary
1/4 teaspoon salt
Cook pasta according to package directions. Drain.
Meanwhile, melt butter in 2-quart saucepan until sizzling; add pepper, onion and garlic. Cook over medium-high heat, stirring occasionally, until vegetables are crisply tender (3 to 4 minutes).
Add cooked pasta, beans, tomatoes, artichokes and salt; mix well. Continue cooking, stirring occasionally, until mixture is heated through (2 to 3 minutes).
