Rich and chunky, these apple bars are truly a homespun favorite.
Heat oven to 350°F. Grease 13x9-inch baking pan; set aside.
Combine flour, salt and baking soda in bowl; stir in oats.
Combine butter, brown sugar and sugar in another bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; beat until well mixed. Add flour mixture; beat at low speed until well mixed. Stir in cinnamon chips and apple.
Spread batter into prepared pan. Bake 33-38 minutes or until toothpick inserted in center comes out clean. Cool completely.
Combine all frosting ingredients in bowl. Beat at low speed, scraping bowl often, until creamy. Spread over cooled bars. Sprinkle with cinnamon, if desired.
*Substitute 1 (10- to 12-ounce) package white baking chips and 1 teaspoon ground cinnamon.

Fantastic Fall recipe! This goodie is moist and has that wonderful spice apple flavor. The cream cheese frosting pairs perfectly! Loved this bar!
This is my husbands favorite!
I made these bars with half cinnamon chips and half white chocolate chips - still added a half teaspoon of cinnamon. I also just put a white fluffy canned frosting on instead of cream cheese frosting. Everyone loved them!
Very rich and delicious. You can skip the cream cheese frosting or 1/2 it because it doesn't need it.
I made these today I didn't have the Chips but the Cinnamon worked fine. Next time I think I will use smaller oats, my kids have a problem with some textures. But we liked it a lot.
These were easy to make and VERY tasty. I cut them small since they are sweet.
I've made this recipe every year after apple picking in September! Now that my friends and family know my tradition they can't wait till I get home from apple picking so I can bake them these bars to enjoy!!!! I get the request for these bars year round from anyone who's had them! GREAT RECIPE!!!!!!

These bars are so good, you don't need the frosting. A very delicious different treat.
A dusting of powdered sugar makes another nice and easy topping for these bar cookies instead of the frosting. Also, crushed walnuts is a winderful addition to the ingredients.
