Serve these decadent butterscotch cashew bars for dessert and you will receive many compliments on this butterscotch treat!
Heat oven to 350° F. Grease 13x9-inch baking pan; set aside.
Combine all crust ingredients in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press crumb mixture into prepared pan. Bake 10 minutes.
Place all topping ingredients except cashews in 2-quart saucepan. Cook over low heat, stirring constantly, 4-7 minutes or until chips are melted and mixture is smooth. Stir in cashews until well coated.
Spread cashew mixture over hot, partially baked crust. Continue baking 10-12 minutes or until golden brown. Cool completely. Cut into bars.

Love this recipe, people ask me to make it all the time.
To cut down on the sweetness factor, I only used about 2/3 cup butterscotch chips. I filled the rest of the 1 cup measure with cinnamon chips. After baking I sprinkled most of a 12-oz. package of semi-sweet chocolate chips on top and covered with a baking sheet so they would melt, then spread them over the top. Into the freezer to set this topping--it took about 40 minutes. Made them late last night and they are going fast!
This is one of my favorite go-to recipes. Whenever I take it to church get-togethers there is never any left. It has won first prize for the Cookies, Bars, and Pastries category. I use salted cashews. It makes it less sweet and gives that wonderful sweet, nutty, carmamel, salty flavor. Thanks Land O' Lakes, great recipe!
It was very sweet. I didn't have a square pan, so instead I used a standard 8 by 13. I didn't have enough topping, so I doubled it. Fortunately, I had enough to triple, cause I definately needed to. I don't know if there would be enough topping otherwise.
Teens love theses bars!Cool completely before removing.
When I served these, most people commented on how sweet they were. "Good, but very sweet". Children liked them more than the adults did.
