A sweet, no-bake treat similar to Nanaimo bars, which are popular in the Northwest and Canada.
Place 1/2 cup butter, 1/4 cup powdered sugar and cocoa in 2-quart saucepan. Cook over medium heat, stirring occasionally, until butter is melted. Remove from heat. Add all remaining base ingredients; mix well. Press mixture onto bottom of ungreased 8-inch square baking pan.
Combine all filling ingredients in bowl. Beat at medium speed, scraping bowl often, until creamy. Spread evenly over crust. Refrigerate at least 30 minutes or until firm.
Place 2 tablespoons butter, 2 tablespoons half & half and corn syrup in 1-quart saucepan. Cook over medium heat, stirring occasionally, 2-3 minutes or until mixture comes to a boil. Remove from heat; stir in chocolate chips until melted.
Pour chocolate into bowl. Mix in enough powdered sugar for desired spreading consistency. Spread glaze evenly over filling. Cover; refrigerate at least 2 hours or until serving time. Store refrigerated.

In Canada, these are called "Nanaimo Bars". In my family, the creamy filling layer is flavored with peppermint extract & green food coloring as a special Christmas/ holiday treat. A favorite of my son & two year-old grandson!
THESE ARE GREAT FOR A SUMMER RECIPE BECAUSE OF NO BAKING. MY FRIEND'S AND HUSBAND LOVED THESE AS DID MY GRANDCHILDREN. I MIGHT EVEN CHOP SOME OF THESE UP AND PUT IN MY HUSBAND'S HOMEMADE VANILLA ICE CREAM.
I've made this twice and people have loved it both times! I recommend cutting into smaller pieces than the recipe says--it's delicious but very rich.
This is the quick, easy, no bake version of Nanaimo bars. I will be making these any time I need a quick dessert. The recipe does not make a very big batch, but they are very rich, so you don't have to serve big pieces. I received rave reviews from my co-workers and multiple requests for the recipe.
