12 (1/2-inch thick) slices baguette-style French bread
2 ounces (1/2 cup) blue cheese crumbles
1 teaspoon finely chopped fresh chives or green onions
Dash ground red pepper
1/4 cup finely chopped red and/or yellow bell pepper*
1 tablespoon finely chopped fresh parsley
Heat oven to 400°F.
Spread 1 side of bread slices with 1 tablespoon butter. Place onto ungreased baking sheet, buttered-side up. Bake 8-10 minutes or until edges are golden brown. Cool slightly.
Combine remaining butter, blue cheese, chives and ground red pepper in bowl; mix well.
Turn bread slices over. Spread unbuttered sides evenly with blue cheese mixture; sprinkle with bell pepper. Bake 5-6 minutes or until cheese mixture begins to melt. Sprinkle with parsley. Serve warm.
*Substitute 1/4 cup finely chopped walnuts.
For easy entertaining, prepare toasted bread slices and cheese mixture early in the day of your get-together. Store toasted bread slices in a tightly covered container at room temperature and cheese mixture covered in the refrigerator. When ready to prepare appetizers, let cheese mixture come to room temperature for easier spreading.
