Spice Pork Enchiladas Con Salsa De Mole

Salsa de Mole

1/2 taza caldo de pollo
1 lata (14 1/2-onzas) de tomates y chiles verdes
1 onza de chocolate semi dulce para cocinar
1 cucharadita de azucar
1/2 cucharadita de comino
1/2 cucharadita de sal
1/4 cucharadita de pimiento negra


3 cucharadas de mantequilla Land O Lakes®
1/2 taza de cebolla, finamente picada
1 libra de carne de cerdo precocida, cortada en pequenos trozos
1/8 cucharadita de pimiento roja8 tortillas de harina (8-pulgadas)
1 1/2 taza de queso Monterey Jack


Combinar todos los ingredients de la salsa en una sarten. Cocer a temperature media por 3 a 4 minutos. Dejar enfriar. Colocar la mezcla en una licuadora y licuar por 1 minuto.

EN una sarten colocar la mantequilla y la cebolla. Cocer por 2 o 3 minutos. Agregar ½ taza de la salsa de mole, el cerdo picado o deshilachado y la pimienta, mezclar bien.

Dividir el relleno entre las tortillas. Enrollar las tortillas y colocarlas en una sarten caliente, hasta que se doren de ambos lados. En una olla pequena calentar la salsa de mole. Una vez caliente la salsa agregar sobre las tortillas en cada uno de los platos.
