Zesty Lemon Shrimp & Pasta

Shrimp pasta is a quick and easy one dish meal. Try this light and lemony pasta toss for dinner tonight.

6 ounces uncooked dried penne pasta
2 tablespoons Land O Lakes® Butter
1 medium (1 cup) red bell pepper, cut into thin strips
1 teaspoon finely chopped fresh garlic
1/2 pound (about 15 to 17) fresh medium raw shrimp, peeled, deveined
3 tablespoons lemon juice
1/2 to 1 teaspoon freshly grated lemon zest
Freshly grated Parmesan cheese
Chopped fresh parsley
Salt and pepper to taste


Cook pasta according to package directions. Drain.

Meanwhile, melt butter in 10-inch skillet until sizzling; add red pepper strips and garlic. Cook over medium heat, stirring occasionally, 2-3 minutes or until peppers are crisply tender.

Add shrimp and lemon juice; cook, stirring constantly, 1-2 minutes or until shrimp turn pink. Add cooked pasta and lemon zest; toss lightly.

Sprinkle with Parmesan cheese and parsley, if desired. Season to taste with salt and pepper.

I didn't have the penne pasta so just used egg noodles and it was still delicious. My husband loved it and asked me to make it again. I used the large shrimp that were already cooked.
I tried this dish but modified using my homemade pesto sauce instead of the lemon....very good! I will definitely try again and maybe follow the recipe this time - which is something I hardly ever do.
Prepared this dish tonight - very delicious! Made some minimal modifications: used cooked shrimp, not raw, added 2 pinches minced onion and 1 pinch oregano to skillet. Will definitely make this again.
Great, easy dish. Forgot about the parmesan cheese, but it still tasted good.
Great quick dish - love the lemon tartness and the red pepper sweetness - hav made it a number of times
Easy and quick. Great emergency meal for guests.
