Texas Barbecue Beef Sandwiches

We’ve used deli roast beef in these sandwiches for convenience, but using leftover cooked beef, pork or chicken would also be great to give leftovers a tasty facelift.

Ingredients

1 1/2 cups ketchup
1 smal (1/2 cup) onion, chopped
1/2 cup firmly packed brown sugar
1/4 cup cider or white wine vinegar
2 teaspoons chili powder
1 teaspoon finely chopped fresh garlic
2 pounds thinly sliced cooked deli roast beef, cut into strips
12 hamburger buns, split
12 (3/4-ounce) slices Land O Lakes® Deli American

Directions

Combine all ingredients except beef, hamburger buns and cheese in 4-quart slow cooker; stir in beef. Cover; cook on High heat setting 2-3 hours or until flavors are blended. Reduce heat to Low to keep warm.

Spoon beef mixture evenly over bottom half of buns; top each with 1 slice cheese. Place top half of bun over cheese.

Stovetop Directions: Stir together all ingredients except beef, hamburger buns and cheese in 2-quart saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a boil. Reduce heat to low. Stir in beef; cook 15-18 minutes or until heated through.

This was easy and tasted okay, and the homemade barbecue sauce was very good, but the slow-cooking left the deli roast beef a little tough. If I made this again, I would probably use leftover chicken or turkey.
