Double Lemon Bars

Lemon bars are traditional favorites that have an easy pat-in-the-pan crust and a filling that’s tangy and fresh!

1/2 cup Land O Lakes® Butter, softened
1/2 cup sugar
1 1/4 cups all-purpose flour


1 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons lemon juice
1 tablespoon freshly grated lemon zest


Powdered sugar


Heat oven to 350°F.  Grease 8- or 9-inch square baking pan; set aside.

Combine all crust ingredients in bowl. Beat at medium speed, scraping bowl often, until well mixed. Press into prepared pan. Bake 15-17 minutes or until edges are lightly browned.

Combine all filling ingredients in same bowl. Beat at medium speed until well mixed. Pour filling over hot, partially baked crust. Continue baking 17-20 minutes or until top is light golden brown. Sprinkle with powdered sugar. Cool completely. Cut into bars.

Recipe Tip

For easy cutting, line pan with aluminum foil, leaving 1-inch overhang on ends. Lightly grease foil. Bake as directed above. Remove bars from pan, using foil ends. Peel foil from sides of bars. Cut into bars.

I followed the recipe to the tea and loved it.
I used powdered sugar instead of sugar in the crust recipe. It turned out excellent!!!
I make this recipe a couple of times a year, it is a huge hit in my family. If I make a batch to take elsewhere, I have to make sure I also make a batch for home.
Looking for a lemon cookie/bar to integrate with my Eastern European receipes for the holidays and this one is very good. Easy to make and I used the aluminum foil as suggested - worked great...I made a receipe and a half since I did not have a smaller pan - came out fine. I will add that I always use Land of Lakes butter for all my cookies and walnut rolls......
I started making these a couple of weeks ago. Everybody absolutely loves them! One lady told me today that these were the best she has ever tasted.
This was quick and easy to make and everyone loved it...we have made it about 10 times so far.
