Gingersnaps--spicy molasses cookies--are great for dunking in milk.

Ingredients

1 1/4 cups sugar
3/4 cup Land O Lakes® Butter, softened
1/3 cup molasses
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger

Directions

Combine 1 cup sugar and butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add molasses and egg; continue beating until well mixed. Add flour, baking soda, cinnamon and ginger; beat at low speed until well mixed. Cover; refrigerate 30 minutes.

Heat oven to 350°F. Shape dough into 1-inch balls. Roll balls in remaining 1/4 cup sugar. Place 2 inches apart onto ungreased cookie sheets. Bake 8-11 minutes or until set and lightly browned.

This is a super cookie, easy to make, delicious, and LOW CARB, but still made with all natural ingredients. Health-wise and diabetic-wise, this one makes sense.
This is a crisp, flavorful cookie, not too sweet and spicy without being overly so. Great with coffee!
These cookies are very good. I rolled them in "Sugar in The Raw" and it not only tasted good ,but also looked good.
