Accurately measuring ingredients, as well as the order you add and mix ingredients, determines the success of your cake. Be sure to follow the recipe as it is written. The proportion of ingredients, dry to wet, are combined in an exact ratio that will guarantee success. If the ratio of ingredients is changed, even slightly, you can end up with a cake that falls, cracks or overflows.

Baking Preparation
Before mixing the batter, position the oven rack in the center of the oven. Preheat the oven for 10 minutes to the recommended temperature. Grease only the bottom of each cake pan with a light coating of vegetable shortening (we use shortening for this purpose because butter may burn).
