Making a great pie crust can be a challenge, even for the experienced baker. Although the ingredient list is short - flour, fat, water and salt - the choice of ingredients and the way you mix them together can mean the difference between a tough, chewy crust, and a tender, flaky one.

Make a pie crust by hand, or try a faster and easier method by mixing the ingredients in a food processor. The food processor does an excellent job of cutting the butter into the flour. Proper mixing is important. Under-mixing may cause the crust to shrink when baked, become hard and look crackled. But overmixing causes the dough to be more crumbly and less tender.
