Game Day Super Snack Mix

I have friends that host a Super Bowl party every year.  They always have a fun game based on the two teams playing, fabulous prizes and of course, great food.

I have friends that host a Super Bowl party every year.  They always have a fun game based on the two teams playing, fabulous prizes and of course, great food.

There are about 20 of us who gather for this “look forward to all year” event.  I thought maybe this year we would all be pulling for the same team, our beloved Minnesota Vikings.  But, once again our hopes were dashed after our loss to the New Orleans Saints.  So, the fans will be divided – some pulling for the Saints and others for the Indianapolis Colts.  Of course, there is always plenty of cheering and moaning along with a little “trash talk” thrown in, too.

The food is always a focal point with this group of friends.  We all bring appetizers and snacks to share.  I change up what I bring each year except I always bring “my” snack mix or as we call it at Land O’Lakes, Crunchy Sweet Snack Mix.  I simply wouldn’t be allowed in the house if I didn’t bring a big batch of this sweet & salty snack.  It has become my signature item.  I make it all year round.  I’ve given it as gifts, I’ve served it at numerous events, I’ve make it for just about every holiday (I just change the color of the candy-coated chocolate pieces) and I ALWAYS bring it to the Super Bowl party.

I keep the ingredients for this recipe on hand – yes, that’s how often I make it.  It only takes 15 minutes to put together and then goes in the oven for about 40 minutes.  I often add pretzels to the mix as well.  Just substitute 2 cups of the cereal with 2 cups of tiny twist pretzels.

First turn on your oven to 250°F.  Spray a 13x9-inch baking pan with non-stick cooking spray.  Place the cereal in the pan and set it aside.

In a 2-quart saucepan combine the brown sugar, butter and corn syrup

Cook over medium-high heat until the mixture comes to a boil.  This takes about 2 to 3 minutes.  I usually stir the mixture while the butter is melting.  Here the mixture is just starting to boil.

Now continue cooking, stirring constantly, for one minute.

Remove the pan from the heat.  If you have a gas stovetop you can simply turn off the heat.  If you have an electric stovetop, remove the pan from the burner since the burner will remain hot and the mixture will continue to cook.  Now stir in the baking soda.  The mixture will bubble and foam as you stir in the soda.

Pour this mixture over the cereal.

Stir gently to coat the cereal.

Set a timer and bake for 20 minutes.  Remove from the oven and stir the cereal mixture.

Bake for 20 additional minutes.  Now remove from the oven and sprinkle the peanuts and candy-coated chocolate pieces over the cereal mixture.

Gently stir to mix.

Spread the snack mixture onto waxed paper or parchment paper.  Be sure the paper is on a heat proof surface such as a wooden cutting board.

Let cool.  This takes about 30 minutes.  If necessary, break mixture into pieces.  Store the snack mixture in a loosely covered container.

Here are my boys enjoying some Crunchy Sweet Snack Mix while watching their beloved Vikings!  Our chocolate lab Mocha wishes she could have some too but, no "people food" for her.
