QMy daughter will be married on Memorial Day weekend. We will have family and friends over on Monday for the gift-opening. Any ideas for some easy, make-ahead dishes that will taste great? It will be a busy weekend, so I would like to keep it simple.

Your idea to keep the meal simple is very wise. After the wedding feast, an uncomplicated yet satisfying meal will be welcome. And, it will keep the focus where it should be – on the newlyweds!

Use a side table or buffet and let guests help themselves to a bountiful Cheese & Fruit Platter plus a deliciously light Wild Rice & Pepper Jack Salad. Add bowls of seasonal wash-and-serve fruits, like blueberries, strawberries or raspberries and your table will decorate itself. And, as you’re still celebrating, we recommend not skipping the dessert! These delightful Tangy Lemon Bars are easy to prepare, and will add a festive touch to your buffet.

What a wonderful idea for the Gift Opening, my son is getting married next May 27, 2012 and this idea along with the meal presentation is just perfect.
