The Pioneer Woman | Easy Chicken Milanese

First, let's get this out of the way:
Is it Chicken Mee-law-nees?

Or is it Chicken Mi-law-nez?

Or is it Chicken Mi-luh-nees?
Or is it Chicken Mee-luh-nez?

Oh dear. This could go on for a while. And we don't have time for this! We've got to get dinner on the table! If your household is like mine, your kids are banging their forks and knives on your formerly ding-free table as we speak.

This is one of my absolute favorite things to make for dinner. The chicken is light and crisp and made extra delicious with Land O Lakes® Butter with Olive Oil & Sea Salt.

Now---Let's get started!


First, take four boneless, skinless chicken breasts that are nice and uniform in size. Place two of them in a plastic storage bag, then seal the bag.


Use a rolling pin or a mallet to pound the chicken until it's pretty thin. (Normal people use mallets. People whose boys took their mallet and converted it into a fishing pole then dropped it in the pond use rolling pins.)


Next, grab three separate pie pans or plates


In one dish, mix together eggs and milk.


Throw some flour in another dish...


And some seasoned breadcrumbs in the third dish.


Season both sides of the breasts with salt and pepper...


Then, one at a time, dredge them in flour...


Dunk them in the egg mixture...


Then dip them in the bread crumbs to coat the chicken on both sides.


Now the chicken will be coated in a nice breading.

Repeat this with the rest of the chicken.


Heat 2 tablespoons Butter with Olive Oil & Sea Salt in a skillet over medium-low heat.


When it's melted and hot, add the breaded chicken.


Cook the chicken on both sides until the breading is golden brown and the chicken is cooked, about 2-3 minutes per side.


Remove them from the skillet when they're done.


To serve, place one piece of cooked chicken on a plate.


Top generously with arugula---or you can use baby spinach, spring salad mix...whatever you have on hand!


Squeeze lemon juice over the greens. This gives it all a nice tangy flavor!


Sprinkle on a little kosher salt and pepper. Finally, sprinkle on some lovely Parmesan shavings.
