I love this recipe because it’s got so many flavors going on — and together they add up to a pizza that’s way more than the sum of its parts.
Ponzu is a Japanese citrus sauce that gives the shrimp a little extra zing. It’s definitely worth it to look for a bottle in the Asian aisle of your
grocery store, near the soy sauce. I combine that citrus zip with creamy peanut sauce, crunchy bean sprouts, sharp green onions and floral basil.
It’s got everything I love about my favorite Thai takeout — but I can still eat it with one hand while relaxing by the grill.
THAI SHRIMP PIZZA
1 (pound) medium shrimp, deveined and tails removed, defrosted if frozen
1/2 (cup) ponzu sauce
4 bamboo skewers, soaked in water at least one hour
1 canola oil or grilling spray for the grill
1 flour or cornmeal for the cutting board
1 (package) refrigerated thin pizza dough
1 (cup) Thai Peanut Sauce
8 (slices) Land O Lakes® 4 Cheese Italian Blend
1 (large bunch) fresh basil
1 (bunch) green onions, chopped in large pieces
1 1/2 (cups) bean sprouts
Marinate the shrimp in ponzu sauce for a minimum of 30 minutes, but no more than 2 hours. Thread the shrimp onto the skewers.
Coat grill grates generously with canola oil or grilling spray so that food will not stick to the burners. Next, preheat a gas or charcoal grill to
400˚F (medium-high heat).
Grill the shrimp for 3 minutes on each side on direct heat or until they have turned bright pink. Remove from the grill. Once cooled, pull the
shrimp off the skewers. Turn the heat on the grill down slightly to 350˚F (medium-high heat).
Dust the cutting board with flour or cornmeal so the dough does not stick. Roll the pizza dough into small circles, about 6 inches across.
Place dough on the grill on direct heat and let it cook with the lid closed for 4 minutes or until char marks have formed on the bottom of the
crust. Flip the crust over and spoon peanut sauce on top.
Next, layer cheese on the pizza and add the shrimp, basil leaves and green onions. Let the pizza cook until the cheese has melted, about 4 to 5
minutes. Remove the pizza from the hot grill and generously garnish with bean sprouts and peanuts.
