Lemon Ricotta Pancakes for Brunch at Home

At our house, breakfast isn’t usually a huge deal. We do enjoy brunch on special occasions, though. And on those special occasions, we have a favorite brunch spot in the Twin Cities. Without fail, I order the same thing every time we go: Lemon Ricotta Hotcakes. I love them, but with a 9-month-old who does not like to sit still, restaurants aren’t exactly doable anymore. So I figured for a fun Sunday morning, I could try making them at home!

Shaved Asparagus and Prosciutto Pizza

Just admit it. If you have kids, sometimes you just want to eat something a little more sophisticated for dinner. You can probably remember those “20-something” days when you could wear form-fitting, tailored clothes, rock a pair of heels, wear dangly jewelry, and carry a really small, trendy purse. You would meet your girlfriends at a cute little bistro, score the last seat at the cool pub table, and eat a slice of pizza with an amazing combination of artisan cheeses, seasonal vegetables and fancy-sounding meat toppings. Life is a little different for that “20-something” me now. Still good, just a bit more complicated.

Dixieland Peanut Pie – The Perfect Pie for Pi Day

My son Kyle is an 8th grade math teacher. He, along with other math teachers, has fun celebrating Pi Day with his students. Reach back in your memory and you’ll recognize Pi. It’s that cute little symbol you used in middle school and high school math. It’s the number that goes on and on, 3.1415926… It’s the number that expresses the ratio of the circumference to the diameter of a circle or in more technical terms “the mathematical constant.” Have I lost you yet? Hang in there. Just stay with me and I promise a better pie (yes, pie - not Pi).

St. Paddy’s Day Shepherd’s Pie

I come from a very Irish family (you wouldn’t believe how many “Patricks” there are in it!). The leader of the family was my mom’s dad – 100% Irish and proud of it! For Papa, St. Patrick’s Day was second only to Christmas. He raised his children and grandchildren to be proud of their heritage and happy to celebrate it so, every March 17th, we were decked out in green from head to toe – shirts, hats, jewelry, nail polish – the works.
