1 teaspoon
Ground cumin

Crust Ingredients

Cornmeal
4 teaspoons
Sugar
1 teaspoon
Salt
2/3 cup
Milk
2 each
Eggs, slightly beaten
1/4 cup

1 (15.25-ounce) can
Whole kernel corn, drained
8 ounces (2 cups)
Land O Lakes® Shredded Pasteurized Process American Cheese - Yellow

*Substitute 2 (15 1/2-ounce) cans cooked pinto beans, rinsed, drained

Directions

  1. Melt 1 tablespoon butter in large skillet until sizzling; add onion and green pepper.  Cook over medium heat, stirring occasionally, until vegetables are crisply tender (2 to 3 minutes).  Add turkey; continue cooking, stirring occasionally, until turkey is no longer pink (5 to 7 minutes).  Stir in beans, tomato sauce and seasoning mix; set aside.
  2. Combine cornmeal, sugar and salt in medium bowl.  Stir in milk, egg and 2 tablespoons melted butter just until moistened.  Stir in corn.  Press mixture on bottom and up sides of greased half hotel pan.  Spoon bean mixture into cornmeal crust.
  3. Bake in 350°F conventional oven for 30 to 45 minutes or until set.  Remove from oven; sprinkle with cheese.  Continue baking for 2 to 5 minutes or until cheese begins to melt.  Let stand 5 minutes before serving.  Serve with sour cream and salsa, if desired.
