Ingredients

Meringue Ingredients

Egg whites
1/2 teaspoon
Cream of tartar
1/4 teaspoon
Salt
1 1/3 cups
Powdered sugar
1 cup
Hazelnuts, finely ground

Coffee Buttercream Ingredients

2 tablespoons
Hot water
4 teaspoons
Folgers Instant Coffee Granules
1 1/3 cups
Land O Lakes® Butter , softened
2 1/2 cups
Powdered sugar
2 teaspoons
Vanilla extract
125 each
Whole hazelnuts

Directions

  1. Place egg whites in bowl of mixer. Let stand for 30 minutes. Preheat oven to 300°F. Arrange oven racks on middle and lower racks of the oven. Line baking sheets with parchment paper. (If desired, draw 1 1/2-inch circles on the parchment; layparchment, drawing side down).
  2. Add cream of tartar and salt to egg whites. Beat at high speed until soft peaks form. Add powdered sugar, 2 tablespoons at a time, beating until stiff, glossy peaks form. Gently stir in ground hazelnuts.
  3. Using a piping bag with a large, plain tip, pipe meringue onto parchment, staying within the 1 1/2-inch circles. Bake 12 minutes. Turn oven off. Leave meringues in oven,keeping door closed for 1 hour. Remove from oven; let cool completely on parchment. When cool, peel off parchment paper. For NRA – pack cookies and freeze.
  4. For NRA – pack powdered sugar, coffee, vanilla and hazelnuts. In Chicago – make buttercream. Combine hot water and coffee granules in small bowl; set aside.
  5. Beat butter for 30 seconds. Add powdered sugar, vanilla and reserved coffee mixture; beat until well mixed. Spoon buttercream into piping bag. Pipe rosette of buttercream in center of each meringue. Top with a whole hazelnut.
