Ingredients

1 tablespoon
Land O Lakes® Butter
1 cup
Frozen diced potatoes with onions and peppers
8 each (large)
Eggs, beaten
1/2 teaspoon
Salt
1/4 teaspoon
Dry mustard
1/4 teaspoon
Pepper
1/2 cup
Carrot, shredded
4 ounces (1 cup)
Land O Lakes® Extra Melt® Process American Cheese Loaf, Yellow, shredded
1/4 cup
Bacon bits
Optional
Fresh chives, chopped

Directions

  1. Melt Butter in 10-inch skillet until sizzling; add potatoes. Cook over medium heat for 3 minutes, stirring often, until potatoes are thawed and tender. Reduce heat to medium-low.
  2. Combine eggs, salt, dry mustard, pepper, carrot and 1/2 cup Extra Melt cheese in medium bowl. Pour over potatoes. Cover; cook for 12 to 15 minutes or until center is almost set.  Sprinkle with remaining cheese and bacon bits. Remove from heat. Cover; let stand until cheese is melted (2 to 3 minutes).
  3. To serve, cut into 6 wedges. Sprinkle with chives, if desired.
