Cornmeal

Baking powder

Salt
2 2/3 cups
Milk
3/4 teaspoon
Chipotle powder
3/4 cup

Eggs, slightly beaten

Onion, chopped
2 teaspoons
Garlic, chopped
3 tablespoons
Red bell pepper, chopped
1 1/2 pounds
Land O Lakes® Golden Velvet® Cheese Spread Loaf, Yellow
3/4 cup
Milk
3 ounces
Green chiles, chopped
1 1/2 teaspoons
Southwest seasoning (recipe below)

Directions

  1. Heat Belgian waffle iron to medium-high heat.
  2. In large bowl, combine flour, cornmeal, baking powder, salt, and chipotle powder.  Stir in milk, melted butter and eggs just until moistened.
  3. Bake 12 (4-inch) waffles.
  4. In saucepan, melt butter.  Sauté onion, garlic and red bell pepper.
  5. Stir in Golden Velvet Cheese, milk, green chiles, and Southwest seasoning until cheese is melted and well blended.
  6. Poach 24 eggs.
  7. For each serving, place 2 poached eggs on 1 waffle; pour 1/3 cup cheese sauce over top.  Garnish with tomatoes and chives, if desired. 

Recipe Tips

Southwest Seasoning:  1/2 teaspoon each onion powder, garlic powder, white pepper, ground cumin and chipotle powder.
