Ingredients

1/4 cup
Land O Lakes® Butter , softened
1/4 cup
Onions, chopped, caramelized
1/4 cup
Roasted red peppers, drained, chopped
8 ounces
Land O Lakes® Extra Melt® Process American Cheese Loaf, Yellow, finely shredded
3 each
Eggs
2 1/2 cups
All-purpose flour
1 teaspoon
Baking powder
1 teaspoon
Salt
1 cup
Pecans, chopped

Directions

  1. In large bowl, combine Butter, onions, peppers, cheese and eggs.  Add flour, baking powder and salt.  Stir in pecans.
  2. Divide dough into fourths (9 ounces each).  With wet hands, form each into 14x2-inch log.  Bake in 350°F oven for 20 to 25 minutes or until light golden brown.
  3. Remove from oven.  Let biscotti stand on baking sheet 10 minutes.  Reduce oven temperature to 325°F.
  4. Cut loaves into 1/2-inch diagonal slices with serrated knife.  Place slices onto same baking sheet.  Continue baking for 15 to 20 minutes, turning once, or until biscotti are crisp and golden brown.
