Ingredients

6 tablespoons
Land O Lakes® Butter
1 cup
Onion, chopped
3/4 cup
Red pepper, chopped
1 tablespoon
Fresh garlic, finely chopped
2 tablespoons
All-purpose flour
1 cup
Milk
4 ounces
Shredded mozzarella cheese
1/4 cup
Mayonnaise
10 ounces
Fresh spinach leaves, stems removed, cut into thin strips
1/8 teaspoon
Hot pepper sauce
To taste
Salt and Pepper
1/2 cup
Land O Lakes® Shredded Parmesan

Directions

  1. Melt butter in sauce pan until sizzling; sauté onion, red pepper and garlic. Stir in flour; continue cooking 1 minute. Continue cooking, stirring with wire whisk, until mixture is thickened milk.
  2. Stir in mayonnaise, spinach, mozzarella cheese, and hot pepper sauce. Season with salt and pepper to taste. Chill.
  3. When chilled stir in Parmesan cheese. Portion 1/2 cup into individual ramekins;hold refrigerated.
  4. When ready to serve: Top each ramekin with 1 tablespoon shredded parmesan cheese. Broil or bake until warm.
