A healthier, baked alternative to French fries using fresh asparagus.

1 teaspoon kosher salt
1/4 teaspoon paprika
1/8 teaspoon ground red pepper
1/4 cup Land O Lakes® Butter, melted
2/3 cup panko bread crumbs
1/3 cup grated Parmesan cheese
1 pound asparagus spears, ends trimmed
Lemon wedges, if desired
Heat oven to 400°F. Line baking sheet with parchment paper; set aside.
Combine all spicy salt ingredients in bowl; mix well. Set aside.
Place melted butter into pie plate or shallow bowl; set aside.
Combine bread crumbs and Parmesan cheese in another pie plate or shallow bowl; set aside.
Coat asparagus spears in melted butter. Roll in bread crumb mixture, pressing to adhere to asparagus. Place in single layer on prepared baking sheet. Bake 10-15 minutes, turning once halfway through baking, or until coating is crispy and asparagus is tender.
Sprinkle with spicy salt, as desired. Serve immediately with lemon wedges. Squeeze lemon wedges over fries, if desired.
Fries can be reheated 5 minutes at 400°F.

Easy and fast to make. I liked the mix of breadcrumbs and cheese on the coating. If I make again will leave salt out as it was unnecessary with the cheese anyway. Was almost inedible due to saltiness. Even my husband thought so and he loves salt.
