Ingredients

2 quarts (8 cups)
popped popcorn
1 cup
pecan pieces
1 1/3 cups
sweetened dried cranberries, coarsely chopped
1 cup
sugar
1 cup
light corn syrup
1 teaspoon
vinegar
1/3 cup
Land O Lakes® Butter
1 teaspoon
vanilla

Directions

  1. Place popcorn in large bowl or roasting pan. Add pecans and cranberries.
  2. Combine sugar, corn syrup and vinegar in heavy 2-quart saucepan. Cook over medium heat, stirring occasionally, until sugar dissolves and mixture comes to a full boil (6 to 9 minutes).
  3. Continue cooking, without stirring, until candy thermometer reaches 280°F. or small amount of mixture dropped into ice water forms a hard but pliable strand (11 to 16 minutes). Remove from heat; stir in butter and vanilla.
  4. Pour syrup over popcorn mixture. Stir until all ingredients are well coated. Spread onto large ungreased baking sheet. Cool completely.
  5. Break into serving size pieces. Store in loosely covered container.

Recipe Tips

The popcorn mixture can also be shaped into large or small balls. Wrap in decorative food wrap and tie a holiday ribbon on them for gift giving.
