Pumpkin cake, also called pumpkin roll, is easy to make and sure to please, perfect for Thanksgiving or Christmas parties. Try this pumpkin cream cheese recipe once and you'll be making it often!

Ingredients

Cake

Powdered sugar
3/4 cup
all-purpose flour
1/2 teaspoon
baking powder
1/2 teaspoon
baking soda
1/2 teaspoon
ground cinnamon
1/2 teaspoon
ground cloves
1/4 teaspoon
salt

large Land O Lakes® Eggs
1 cup
sugar
2/3 cup
canned pumpkin
1 cup
chopped walnuts, if desired

Filling

1 (8-ounce) package
cream cheese, softened
1 cup
sifted powdered sugar
6 tablespoons
Land O Lakes® Butter, softened
1 teaspoon
vanilla
Powdered sugar, if desired

Directions

  1. Heat oven to 375°F. Grease 15x10x1-inch jelly-roll pan; line with parchment or waxed paper. Grease and flour paper; set aside. Arrange clean thin, cotton kitchen towel on counter; sprinkle with powdered sugar.
  2. Combine flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Combine eggs and sugar in large bowl; beat until thickened. Add pumpkin; beat until well mixed. Stir in flour mixture. Spread batter evenly into prepared pan. Sprinkle with walnuts, if desired.
  3. Bake for 13 to 15 minutes or until center springs back when lightly touched. Immediately loosen cake from edges of pan; invert onto prepared towel. Remove pan; carefully peel off paper. Roll up cake in towel while hot, starting with 10-inch side. Cool completely on wire rack.
  4. Beat cream cheese, 1 cup powdered sugar, butter and vanilla in small bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic food wrap; refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired..

Recipe Tips

- Be sure to put enough powdered sugar on the towel before rolling up cake so it will not stick.

I have used this recipe for years. The only thing I do differently is to add a couple more tablespoons of pumpkin, seems to make it a little more moist. Don't add too much or it will fall apart! Everyone loves it and I've even had people want to buy them from me.

Make sure you have enough powdered sugar to roll out tho. I used wax paper with vegetable oil spray to bake it. They came out so easy. Great recipe!!

I've made it once and my family & I loved it. Several things which made it fantastic was Libby Pumpkin, Land O Lakes Butter, & Philadelphia Cream Cheese - these are all the brand names that I have used all my life. I believe if you use the other brands or generic names it won't taste as good as it should. Holidays come once a year and people should splurge on the name brands that I mentioned.

I make pumpkin rolls every year for the last 10 years. I use parchment paper in the pan, and than I use the same parchment paper to roll it up in. Does not stuck. Works great

Hi La Donna, the pumpkin mix already has the spices added. We suggest using the pure pumpkin, as it is more customizable. It also has sugar syrup in it, which can negatively impact the outcome of your pumpkin roll. Hopefully this helps - happy baking!

What is the difference of using the pumpkin mix verses the 100% pumpkin mix? i find it cheaper to get the can that has it all mixed already but does that make a difference? I tried to make this last night and the time allowed of cooking was way tooo short... and it was a flop

I make this every year at Christmas, so that every one gets their own pumpkin roll. I have tried everything, but the cake still sticks to the towel and some of the crust comes off on the towel. I have used a very thin towel, a flour sack towel, parchment paper, and even a pillow case. The pillow case seems to work the best, with lots of powdered sugar. It still sticks, but not as badly. Any suggestions? It is getting very frustrating. My grandson's girlfriend wants the recipe and I would love for her to be able to avoid this frustration.

I have made this recipe for years with rave reviews. It has always turned out well so I never felt the need to read the reviews...until today! I must say, Jami and Jo, you two are geniuses! I LOVE BOTH OF YOUR SUGGESTIONS! I'm going to try using Jami's suggestion and roll the cake in the parchment. If this works, you sure have saved me a huge mess...and I will owe you for life! For high altitude, I made this adjustment: Added 2-3 tablespoons flour Reduced Baking Soda by 1/8 teaspoon. Reduced Baking Powder by 1/8 teaspoon Decreased Sugar by 1-2 tablespoons

I use this recipe,super easy,I grease my jelly pan & add Parchment paper flatten paper by filling all corners ,then I grease & flour the paper on top ,leave a small bit of paper over the ends & bake remove from oven let set about 5 mins. in pan &roll it up using the same paper you baked on then unroll & add filling,super easy & no need to roll in a towel.

The red measurements do no come up on my printer. So went to grocery store to get it off the can of pumpkin. I hop this don't do this for anyone else. I Love this recipe. Audrey
