Ingredients

2 1/2 cups water

1 cup dried lentils

1 small (1/2 cup) onion, chopped

1 medium (1/2 cup) carrot, chopped

1 (6-ounce) can tomato paste

1/3 cup water

1 tablespoon firmly packed brown sugar

2 teaspoons country-style Dijon mustard

1/4 teaspoon salt

8 whole wheat hamburger buns

16 slices (2 1/4 x 1-inch) Cheddar cheese, each cut in half

How to make

  1. STEP 1

    Place water and lentils in 2-quart saucepan. Cook over high heat 3-4 minutes or until mixture comes to a boil. Reduce heat to medium. Cover; cook 20 minutes. Stir in onion and carrot. Cover; continue cooking 15-20 minutes or  until lentils are tender. Drain, if necessary.

  2. STEP 2

    Stir in tomato paste, water, brown sugar, mustard, and salt. Cook over medium heat, stirring occasionally, 3-5 minutes or until heated through. Spoon mixture onto buns; top hot lentil mixture with 2 pieces cheese.
