Peanutty Snickerdoodle Bars

This classic cinnamon sugar cookie is baked in a bar and topped with peanuts and coarse grain sugar for a special holiday treat.

Ingredients

Bar

1 1/2 cups all-purpose flour

1 teaspoon cream of tartar

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup sugar

1/2 cup Land O Lakes® Butter softened

1 large Land O Lakes® Egg

Topping

1/2 cup coarsely chopped peanuts

1 tablespoon coarse grain sugar

1/4 teaspoon ground cinnamon

Green coarse decorator sugar or edible glitter, if desired

How to make

  1. STEP 1

    Heat oven to 350°F. Grease and flour 13x9-inch baking pan; set aside.

  2. STEP 2

    Combine flour, cream of tartar, baking soda and salt in bowl; set aside.

  3. STEP 3

    Combine 3/4 cup sugar and butter in another bowl. Beat at medium speed, scraping bowl often, until well mixed. Add egg, continue beating until well mixed. Add flour mixture; beat at low speed, scraping bowl often, until well mixed. Press dough onto bottom of prepared pan.

  4. STEP 4

    Combine peanuts, 1 tablespoon course sugar and cinnamon in bowl. Sprinkle over dough. Gently press peanuts into dough.

  5. STEP 5

    Bake 15-17 minutes or until toothpick inserted in center comes out clean and bars are golden brown. Sprinkle with green decorator sugar, if desired.

  6. STEP 6

    Cool completely. Cut into bars.

Tip #1

- Cream of tartar is a white acidic powder used as a leavening agent in baked goods. It is also used in candies and frostings for a creamier consistency. It is sold in the spice and flavoring section of the baking aisle of the supermarket.

Tip #2

- For easy clean up and cutting, line pan with aluminum foil, leaving an overhang on both ends. Spray with no-stick cooking spray and lightly flour the foil. When bars are completely cool, lift out of pan using ends of foil. Cut into bars.
