Tiny Apricot Almond Squares

1 cup sugar

1/2 cup Land O Lakes® Butter, softened

1 large Land O Lakes® Egg

1/2 teaspoon almond extract

1 3/4 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1 cup apricot preserves

3/4 cup sliced almonds


Powdered sugar

How to make

  1. STEP 1

    Heat oven to 350°F. Line 15x10x1-inch baking pan with aluminum foil, extending foil over edges. Lightly spray with no-stick cooking spray; set aside.

  2. STEP 2

    Combine sugar and butter in medium bowl. Beat at medium speed until creamy. Add egg and almond extract; continue beating until well mixed. Add flour, baking powder, and salt. Beat at low speed until well mixed.

  3. STEP 3

    Press mixture evenly into prepared pan. Spread apricot preserves evenly over batter. Sprinkle almonds evenly over preserves. Bake 20-25 minutes or until set and just beginning to brown. Cool completely.

  4. STEP 4

    Sprinkle with powdered sugar. Lift bars out of pan, using foil ends. Cut into 1 1/2-inch squares.

This recipe was very quick to make and tasted awesome! My husband has requested it again for Christmas. I was planning on making it half apricot and half cherry this time.

I love this recipe!! I have made it several times ad it is ALWAYS a hit! I use a pizza cutter sprayed with a little non stick spray to cut the squares. Perfect with coffe and tea after a big holiday meal.

The bars are easy, quick and delicious, but much too sweet even though the sugar was reduced a bit. My recommendation is to cut the sugar by 1/4 or 1/3 cup to compensate for the sweetness of the apricot preserves.
