1 (9-ounce) package refrigerated fresh cheese tortellini
1/4 cup Land O Lakes® Butter
1 small (1/2 cup) onion, sliced 1/4-inch thick
2 teaspoons finely chopped fresh garlic
1 medium (1 cup) zucchini, cut into 1/4-inch slices
1 small (1 cup) yellow summer squash, cut into 1/4-inch slices
1/4 teaspoon salt
1/4 teaspoon dried parsley flakes
1/4 cup Parmesan cheese
1 tablespoon chopped fresh basil leaves
*Substitute fresh ravioli.
Cook tortellini according to package directions. Drain; keep warm.
Melt butter in 12-inch skillet over medium heat until sizzling. Add onions and garlic. Sauté 2-3 minutes or until fragrant. Add zucchini, squash, salt, and dried parsley. Cook, stirring occasionally, 5-8 minutes or until vegetables are lightly browned and crisply tender. Add cooked tortellini. Toss together until combined.
Place into serving dish. Sprinkle with Parmesan cheese and basil.

Perfect! The only ingredient I didn't have was onion, but I had equivalent amount of green onion. Probably made for a more subtle onion flavor. Kids & husband enjoyed it as much as me. Also, I used freshly grated Parmesan. I suggest doubling recipe if you want to serve 6 as a main dish. Will definitely make again!
