Peanut Butter Banana Bread

Peanut butter and bananas - we can't get enough of this combination. Classic banana bread with a peanut butter center will be your new go-to brunch bread!

Ingredients

Filling

4 ounces cream cheese, softened

1/4 cup creamy peanut butter

2 tablespoons firmly packed brown sugar

Bread

1/2 cup Land O Lakes® Butter softened

2 tablespoons sour cream

3/4 cup firmly packed brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

2 large Land O Lakes® Eggs

Bread

2 medium (1 cup) ripe bananas, mashed

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

Topping

Coarsely chopped dried banana chips, as desired

Coarsely chopped dry roasted peanuts, as desired

How to make

  1. STEP 1

    Heat oven to 350°F. Spray bottom of 9x5-inch loaf pan with no-stick cooking spray. Set aside.  

  2. STEP 2

    Combine all filling ingredients in small bowl. Beat until well mixed. Set aside.

  3. STEP 3

    Combine butter, sour cream, brown sugar, cinnamon, and salt in a medium bowl. Beat on medium speed until well mixed. Add eggs, beating after each addition. Add bananas and vanilla; beat until well mixed. Add flour and baking soda. Beat, scraping bowl often, until well combined. 

  4. STEP 4

    Spread about 2 cups batter into prepared pan. Spoon 15 dollops of filling evenly over batter, avoid touching sides of pan and leaving small amount of space between dollops. Top with remaining batter, smoothing top. Sprinkle top with dried banana chips and peanuts, as desired, gently press topping into batter.

  5. STEP 5

    Bake 50-60 minutes or until toothpick inserted into center comes out clean. Cool completely before slicing.

Just made this bread. Very yummy but I found that the filling wasn't peanut buttery enough for me. If I make this again, I will add more peanut butter or maybe less of the cream cheese. Came out great otherwise!
