Oatmeal Scotchies

Oatmeal scotchies are a buttery oatmeal and butterscotch cookie that are a great lunchbox treat.

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup Land O Lakes® Butter, softened
3/4 cup sugar
3/4 cup firmly packed brown sugar
1 teaspoon vanilla*
3 cups uncooked quick-cooking or old-fashioned oats
1 (11-ounce) package butterscotch-flavored baking chips


Heat oven to 375°F. Combine flour, baking soda, salt and cinnamon in small bowl.

Combine butter, sugar, brown sugar, eggs and vanilla in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Add flour mixture gradually, beating at low speed, until well mixed. Stir in oats and morsels.

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 7-8 minutes for chewy cookies or 9-10 minutes for crisp cookies. Cool 2 minutes on cookie sheet; remove to cooling rack.

*Substitute 2 teaspoons grated orange zest.

Bar Cookies: Prepare cookie dough as directed above. Spread into greased 15x10x1-inch baking pan. Bake 18-22 minutes or until lightly browned. Cool completely. 48 bars.

cookies are too sweet, tough, and hard. I cooked them 8 min. tried 10 and they burned.
I couldn't find a variation on this recipe so if anyone has one to try I would really appreciate it.
These were easy to make, especially with my two daughters helping me. The cookies came out perfect, and taste wonderful. We will definitely make these again.
I you love butterscotch you must try this recipe - it's been a favorite in our house for years! Simple recipe - easy to follow - always turns out great - they won't last long in the cookie jar and we have Grandma's big old Bauer cookie jar!
