Cheesy Fiesta Quesadilla

6 (8-inch) burrito-style flour tortillas

3 tablespoons Land O Lakes® Butter, melted

18 (3/4-ounce) slices Land O Lakes® Deli American, cut in half

3 cups cubed cooked chicken

1 (15-ounce) can black beans, drained, rinsed

1 (14.5-ounce) can diced tomatoes with chiles, drained


Salsa, if desired

Shredded Cheddar cheese, if desired

Sour cream, if desired

How to make

  1. STEP 1

    Brush 1 side of each tortilla with butter. Place tortillas onto cutting board, buttered-side down.

  2. STEP 2

    Place 3 pieces cheese over half of each tortilla. Layer with 1/2 cup chicken, 1/4 cup black beans and 3 tablespoons tomatoes. Top each with 3 pieces cheese. Fold other half of tortilla over filling.

  3. STEP 3

    Heat 12-inch skillet or griddle over medium heat. Cook each quesadilla, turning once, 3-4 minutes or until lightly browned.

  4. STEP 4

    Cut each into 3 wedges. Serve with toppings as desired.
