Fresh Mushroom Appetizer

1/4 cup Land O Lakes® Butter, softened, divided

8 ounces (2 1/2 cups) mushrooms (porcini, shiitake, oyster, crimini, etc.), finely chopped

1/4 cup finely chopped green onions

2 teaspoons finely chopped fresh garlic

1/3 cup chicken broth

4 ounces cream cheese or Neufchâtel cheese, softened

2 tablespoons chopped roasted red pepper  

1 tablespoon chopped chives or green onion

Chopped green onion, if desired

Chopped red bell pepper, if desired


Crackers or cracker bread

 *Substitute 2 tablespoons chopped pimiento.

How to make

  1. STEP 1

    Melt 2 tablespoons butter in 10-inch skillet over medium-high until sizzling; add mushrooms. Cook, stirring occasionally, 2 minutes. Add 1/4 cup green onions and garlic. Continue cooking, stirring constantly, 1 minute. Add chicken broth. Continue cooking, stirring occasionally, 3-4 minutes or until liquid is absorbed. Cool completely.

  2. STEP 2

    Place mushroom mixture into bowl; add cream cheese, remaining 2 tablespoons butter, roasted red pepper and chives. Beat at low speed, scraping bowl often, until well mixed.

  3. STEP 3

    Spoon mixture into serving dish. Cover; refrigerate at least 1 hour.

  4. STEP 4

    Garnish with chopped green onion and bell pepper, if desired. Serve with crackers or cracker bread.

Tip #1

If using dried wild mushrooms, follow soaking directions on package. Drain well before chopping.
