Chicken Fajita Fiesta!

Summer is my favorite season for three reasons- 1) no more school, and the girls can sleep in, 2) the sunny weather, and 3) we use the grill for dinner almost everyday.  Life doesn't get better than that!  Speaking of using the grill, the other day Jeremy and I were invited to a cul-de-sac cookout with a few friends, and it was one of the coolest parties ever!  Everyone (like 6 houses) had tables set up in their driveways, and you could go from house to house sampling food and drinks.  Talk about fun!!!  People were grilling hot dogs, hamburgers, chicken, steak, etc.  It was unlike any get-together I'd ever been to.  Makes me wonder whether we should have moved into a cul-de-sac...Oh well!

Chicken Fajita

Speaking of using the grill, the other day Jeremy and I were invited to a cul-de-sac cookout with a few friends, and it was one of the coolest parties ever!  Everyone (like 6 houses) had tables set up in their driveways, and you could go from house to house sampling food and drinks.  Talk about fun!!!  People were grilling hot dogs, hamburgers, chicken, steak, etc.  It was unlike any get-together I'd ever been to.  Makes me wonder whether we should have moved into a cul-de-sac...Oh well! 

To top the evening off, everyone chipped in money and over $1300 worth of fireworks showered the sky.  Kids chased parachutes, and we enjoyed every second with our friends.  It was really incredible! 

So to help with the grill pitch-in, we decided to try Chicken Fajitas with Grilled Sweet Corn Salsa.  It was super easy to make, and I heard nothing but rave reviews from everyone.  I started by flattening or butterflying each chicken breast to help reduce grilling time (and to help it cook more evenly).

To prepare the marinade, combine the soy sauce and salsa.  I used a gallon-sized bag, but you could also use a bowl or pan.

And just like that the marinade's ready!

Add the chicken to the marinade, and allow it to rest (refrigerated) for at least an hour.  I allowed the chicken to marinade for a few hours, and it was super yummy!

To prepare the corn for grilling, butter it well.  Oh, yeah!

Add the chicken to the grill alongside the corn.  Let it cook for about 5 minutes.

Using a grilling spatula or tongs, rotate the corn and flip the chicken.  Allow it to cook until the chicken is cooked through and the corn is slightly charred.  It should take about 10 minutes.

Perfect as is!  I made extra just in case Jeremy and the girls got a hold of it before I could make the relish.

To make the sweet corn relish, remove the kernels from the cob with a knife or corn peeler.

Oh, it smells so good!  Nothing brings out the sweetness in corn like grilling it!

Add the corn to the salsa, and mix well.

So easy and super yummy...that's all it takes for the sweet corn relish!

After the chicken cools for a few minutes, slice it into thin strips.

Chop the green onions, and prepare the shredded cheese. Wow! What a great looking spread for taco-making...Mmmmm!

A tortilla, fajitas, cheese, onions, and sweet corn relish...What an awesome taco!  And I know because I ate the one in the picture...
