Kim's Resolution: To eat more vegetables

Kim, like so many of us, has a packed schedule: She works full time, is raising small kids and is also pursuing an advanced degree. “In the past year,” she says, “my eating habits have been in the tank.” So, Kim has decided to focus on one change that is doable: eating a fresh vegetable at every meal.

“We have a garden every year, and during the summer we eat so healthfully,” Kim says. “But in the winter, it takes more planning, like remembering to pick up some fresh produce when I make quick trips to the grocery store. ”

One way to eat more vegetables, Kim says, is to focus on what she truly enjoys. “I grew up eating salad at every meal, and it was always iceberg. Now the variety of lettuce that’s available is just so much fun. There are really spicy mesclun mixes that practically don’t even need dressing.” Both her kids have learned to love lettuce by eating fresh, flavorful varieties.

To make her resolution even more fun, Kim plans to revel in the sheer variety of vegetables in the produce section. “The possibilities are endless,” she says. “I’m excited to explore the whole range and find a new family favorite we will plant in the garden next summer.”
