Mallory's Resolution: To plan meals ahead of time
Mallory knows that when her first baby arrives in April, things are going to change, starting with the way her family eats. “We’re going to have to plan ahead more than we do now. Both my husband and I work, and sometimes it’s just easier for us to go out and eat than run to the grocery store after work.”
Mallory plans to use smartphone apps she already has on her phone for meal planning and grocery shopping, and she’s thinking about investing in a chest freezer. That way, the basic cuts of meat, like ground beef, ground turkey and chicken breasts, will already be close at hand. She’ll also fill it with versatile treats, such as the pesto she makes with her mom, sister and aunt every summer. “We use it for everything,” she says. “We put it on grilled meat, or stir it in pasta or spread it on bread for appetizers.”
Pasta is another meal-planner’s friend. “It’s so easy to customize,” Mallory says. “One night we might have an Italian pasta bake, the next we can do Thai noodles. They both use things we usually already have on hand.”
Our Test Kitchen’s Basil & Parsley Pesto is great to keep in the fridge or freezer for easy weeknight meals. Put this Chicken Pesto Bake on your weeknight menu plan.
