Grilling: Beyond Burgers

It’s definitely that time of year again. Pull out the patio furniture, feel the sun on our faces and eat a meal outside. After a long, drawn-out winter, there are few things better than the sound of a distant lawn mower and the smell of food cooking on a grill. Always one to take things a step further, I’m looking for ways to bring that aroma of flame-cooked foods to something other than the old standby fare: burgers and steaks.


And I don’t just mean chicken. How about a whole new meal occasion, like breakfast? Our Sausage, Egg & Cheese Breakfast Sandwich is the perfect recipe. Toast the English muffins, grill the sausage, melt the cheese and cook the eggs – all outside on the grill. Wait, eggs? On the grill? Yep, that’s right. Just use a grill-safe pan or a disposable aluminum pan (for super easy clean up) with a quick spray of oil and cook away. I can’t think of a better way to start a beautiful Saturday than with a meal al fresco.



I’m not one to fire up the grill every day, but when I do, I like to take advantage of it. Sometimes that means cooking some extra salmon or chicken to top my lunchtime salads. Another great way to grill once and eat twice is to prepare a double recipe of Garlic & Herb Grilled Corn.



Butter, garlic and parsley bring great flavor to the corn in a single step, making it a perfect, easy side dish for grilled chicken, steaks, or fish. The same corn can be cooled and cut off the cob to make a delicious Grilled Mexican Corn Salad – a tasty side dish to serve with tacos or fajitas the next day.



Grilled vegetables are one of my favorite ways to capture the freshness of the season. Whether skewered or cut into hearty pieces, grilled veggies are a natural accompaniment to an outdoor meal.



Another easy way to grill vegetables is in a foil packet. This method steams the vegetables and really infuses them with whatever flavors you add. Two of my favorite recipes right now are Italian Grilled Cauliflower Packets and Grilled Mushrooms for Steak (though, truth be told, I don’t even need the steak – the mushrooms alone are that good!).



Let’s not forget about dessert. Grilling fruit caramelizes the natural sugars for a decadent, yet healthy, treat. Much like vegetables, you can grill fruit in a packet like Grilled Caramel Peaches or skewered and placed directly on the grates. Or try Grilled Pound Cake for a great twist on shortcake, and top with your favorite berries.
