Cooking Like A College Kid

Dorm living. It’s an experience everyone should have, but it can be a big change from living at home. One of the biggest adjustments is having a microwave and mini-fridge as appliances…and no mom or dad to make dinner every night. So, what to do when it’s 7pm, the dining hall is closed and eating one more bowl of Ramen noodles might make you cry?
 
Breakfast for dinner! Omelet in a Cup can be made in the microwave and is perfect for one person. Customize with whatever veggies you have on hand. You can also buy pre-cooked bacon at the grocery store or cook that in the microwave, too!

Tomato Salad Stacker
is a great way to have something fresh to eat. A riff on Caprese salad, stacked vertically. Just add a slice of bread for a filling dinner.
 
You can also throw a Mexican Fiesta! Guacamole requires no cooking, and this All-American Cheese Dip is made entirely in the microwave. Add tortilla chips and jarred salsa for a dorm room party.

And just a tip from a 20-something college survivor – always try to have fruits and veggies in the mini- fridge. It’s a good idea to have fresh produce on hand for snacking. The freshman 15 doesn’t just magically disappear sophomore year.
