Halloween is one of our favorite holidays! There’s just something really fun about getting dressed up and walking around with friends collecting yummy treats. Even better, it’s an excuse to invite all our neighbors and friends over for snacks.
Every year we host a pre-trick-or-treating party and everybody gathers at our home for cupcakes, cookies, candy, and apple cider. It just doesn’t get better than that; I get to bake, and everyone gets to enjoy my treats!
Last year we added a couple of new treats to our party menu including Smiling Scarecrow Cupcakes and the Ghosts in the Graveyard Cookie Pizza. This year the girls decided to add Halloween Party Pops. What’s better than a frosted cookie on a stick? They are super cute, and the girls enjoyed every bite! Brooke, my 2-year-old, did especially well with it since she didn’t have to hold onto the cookie. I love that! My only dilemma with these is trying to decide whether to serve them at the party or wrap them up and hand them out as treats for neighborhood trick-or-treaters!
To make the cookie dough, begin by combining butter, sugar, and brown sugar in a large bowl.
When the mixture is well combined, add the egg, vanilla and continue to mix until smooth.
Be sure to scrape down the sides of the bowl with a spatula as needed.
In a separate bowl, combine the flour, baking soda, cream of tartar, and cinnamon.
With the mixer on low speed, carefully add the dry ingredient mixture to the sugar/butter/egg mixture.
Mix on low speed until the mixture forms a thick dough.
To shape each cookie, begin by rolling the dough into 30 balls; each should be about 1.25 inches, but I didn’t really measure them.
After the balls are formed, gently flatten them into 2” circles using the bottom of a glass dipped in sugar.
I found it easy to flatten them all at once and transfer them to the baking sheet as needed, although you could also flatten them directly on the baking sheet if you like.
Add the cookies to the baking sheet in a staggered pattern; you’ll need room for the sticks! Wooden craft sticks can be found at craft supply stores, and I've even seen some grocery stores carrying them.
Gently insert a stick into the center of each cookie.
They’re ready for baking!
Bake them for 7-9 minutes or until they begin to brown slightly. Remove them from the oven and let them rest for about a minute. Using a spatula, transfer them to a cooling rack and allow them to cool completely.
While the cookies cool, combine the powdered sugar, butter, and half and half in a medium-sized bowl.
Mix on medium-high speed until the frosting is smooth. Cover and refrigerate until you’re ready to ice the cookies.
If you have kiddos in the house like I do, they’ll appreciate the extra frosting left on the beaters…
To make the cookies festive, add decorative ribbons or message tags to the sticks.
Using a spatula or butter knife, spread frosting onto each cookie. No need to get fancy with this part because you’ll cover them in sprinkles!
They’re ready for some sprinkles!!!
