Grapes … on a Pizza?

My family loves making (and eating) pizza. If I have time, I’ve been known to make my own dough and even cook them on the grill. Weeknights, when time and energy are short, I rely on pre-made flatbreads topped with whatever looks good in the fridge. Crank the oven when you walk in the door and a real meal can be ready in 30 minutes.

Working in the Land O’Lakes Test Kitchens means I see recipes as they are being developed. Butter with Olive Oil & Sea Salt is a new product featured in a new recipe that I decided to make it for my family (and you). The subtle taste of olive oil and sea salt really enhances savory dishes, especially Mediterranean foods.

This new recipe for Grapiest Chicken Flatbread Pizza Ever is a unique and delicious mix of rotisserie chicken, roasted red grapes and feta cheese. The combination of savory and sweet is appealing to kids and adults alike, and is a great option as an appetizer for a Greek-themed dinner party. Your friends and family will think you labored all day making this tasty treat, but you’ll actually have time to slip in a quick game of "Words with Friends" while the kids set the table.

To get started, heat the oven to 425°F and gather your ingredients. I used a new butter product from Land O’Lakes, Butter with Olive Oil & Sea Salt.

Line a jelly-roll pan with foil (I hate scrubbing pans after roasting things).

Melt 1 teaspoon Butter with Olive Oil & Sea Salt in a medium bowl in the microwave for about 8 seconds. Then add ½-pound grapes and toss to coat. Add Italian seasoning and black pepper and mix well.

Place the coated grapes onto the prepared pan in a single layer and bake for 15 minutes. The grapes will begin to soften and give off some juice.

Meanwhile, combine ¼ cup melted Butter with Olive Oil & Sea Salt with 1 teaspoon finely chopped garlic in a small bowl. Brush this mixture evenly over each flatbread.

Top each flatbread with ¼ cup chicken, 2 tablespoon feta cheese and ¼ teaspoon chopped fresh thyme.

After baking let the grapes cool until you are able to touch them, and then cut the roasted grapes in half. Evenly distribute the grapes between the flatbreads.

Place the flatbreads onto an ungreased baking sheet and bake for 5 to 7 minutes – until toppings are heated through and the edges look crisp. The pizzas could be prepared earlier in the day and baked just before serving. Cover and refrigerate the pizzas. At serving time bake the pizzas slightly longer until the pizzas are heated through. Gorgeous!
